Whitefish, perch and other fish from the lake form the centrepiece of these delicious fish menus. In addition to the traditional dishes, the chefs create entirely new recipes to give these fine fish a more surprising twist.

Lake Constance fish is a natural product and is not available in unlimited quantities. If, for example, there is no Lake Constance whitefish because the fishermen have not caught any, the restaurants are happy to offer other fish dishes that are just as delicious as whitefish.

Fish from Lake Constance

With its large reed beds and shallow water zones, Lake Constance offers an ideal habitat for a wide variety of fish species. Whitefish, char, zander, burbot, and various species of trout—along with pike, ruffe, and eel—are just a small selection of the fish found in Lake Constance.

  • Whitefish is the best known and most popular edible fish in Lake Constance. In Switzerland it is known as Almeli, in Bavaria as Renke and in the north as Maräne. It is eaten whole, but mostly as a fillet, and tastes particularly good when smoked.
  • Perch or Kretzer has a strong flavor and is juicy.
  • The pike is one of the largest predators in freshwater.
  • The carp originally comes from Asia and was spread by monks as a Lenten food in Germany and Lake Constance.
  • The roach is one of the unknown treasures of Lake Constance.
