During the fish weeks, the chefs of restaurants at western Lake Constance serve 3 special course menus. Whitefish, perch and other fish from the lake form the centrepiece of these delicious fish menus. In addition to the traditional dishes, the chefs create entirely new recipes to give these fine fish a more surprising twist.
Lake Constance fish is a natural product and is not available in unlimited quantities. If, for example, there is no Lake Constance whitefish because the fishermen have not caught any, the restaurants are happy to offer other fish dishes that are just as delicious as whitefish.

With its large reed beds and shallow water zones, Lake Constance offers an ideal habitat for a wide variety of fish species. Whitefish, char, zander, burbot, and various species of trout—along with pike, ruffe, and eel—are just a small selection of the fish found in Lake Constance.
